Being adaptable

My mother's apartment sustained water damage due to a leak in the apartment above hers and when we had lunch yesterday, she said to me, "This has made me think about set in our daily routines we are." and she is right that when life throws a curve ball, we have to be able to adapt our schedules and our daily routines to be able to hit the ball out of the park.

Except for Romaine, lettuce fares better when ripped then when cut. Tearing encourages breakage along naturally occurring cellular fault lines, while cutting damages cells, producing bruising and browning

In the Kitchen on Thursday: Chicken Tenders

Crunchy Chicken Tenders (even a kid will love—my daughter does.)

3-4 boneless chicken breasts
2 egg whites
2 Tbsp. milk
2 Tsp. Sriracha sauce
2 Tsp. chopped Scallion, greens only
1.5-2 C. Panko bread crumbs
Pepper to taste

Preheat oven to 350. Grease the top of a broiling pan with cooking spray. Whisk together the egg whites, milk, Sriracha and scallions. In a shallow dish mix crumbs with pepper. Cut the chicken in strips lengthwise. Coat each strip with egg white mixture and then cover with bread crumbs. Place on the pan. Repeat with the rest of the chicken. When you are done, give the chicken pieces a misting of cooking spray. Place a piece of tinfoil on a lower rack and the put in your pan on the upper rack. Bake for 20-30 minutes. Serve with your favorite dipping Sauce.

A mother/daughter day any mother would want

Today my daughter and I spent the day together (she is still on school break) cleaning, organizing, having lunch with daddy and when the museum was closed, walking around, buying a book and running errands, so I am grateful that my 8 year old has a go-with-the-flow attitude when needed.

Where did the time go?...TV

While watching TV can be very relaxing as in yesterday afternoon when my husband and daughter were out, I am beginning to see it as a time drain, especially when reruns of my favorite shows are on during the day and I work from home—TV lunch anyone?!
