In the kitchen on Thursday: Not your mother's meatloaf

Turkey Loaf

1 lb. ground turkey
1 egg + 1 egg white
1/3 C. oats
1/3 C. ketchup
1/2 tsp. dried Thyme
2 Tbsp. dried Parseley
3-4 Tbsp. finely chopped Portobello mushroom
Salt and pepper to taste.

Preheat oven to 350. Mix all ingredients together. Place in a greased loaf pan. Bake for 45 minutes. Let cool for 10 minutes. Makes 4 servings. I cut the loaf into 8 pieces and each person gets 2 slices.
